The Real Collaboration

On June 23, 2025, Crumbl and pop singer Benson Boone released the Moonbeam Ice Cream Cookie nationwide — a chilled chocolate cookie loaded with cookies-and-cream pieces, topped with a tie-dye swirl of lemon, berry, and marshmallow buttercream, and finished with a white chocolate drizzle. The flavor takes its name directly from a lyric in Boone’s song “Mystical Magical,” off his 2025 album American Heart: “Moonbeam ice cream, taking off your blue jeans.”

According to Crumbl’s own press materials, Boone was directly involved in shaping the cookie, with co-founder Sawyer Hemsley crediting his “creativity, passion, and musical energy” for the collaboration. The flavor proved popular enough that Crumbl brought it back for a second consecutive week (June 30–July 5) — the first time in company history a limited-edition cookie has returned for back-to-back appearances on the rotating menu.

What It Actually Tasted Like

Reviewers who tried the original release described a rich, fudgy chilled chocolate cookie base, with the lemon-berry-marshmallow topping reading as genuinely unusual rather than a straightforward sweet frosting — one review called it a fudgy, citrus-infused, marshmallow delight that sold out quickly at many locations.

Copycat Recipe: Moonbeam Ice Cream Cookie

Since this was a limited nationwide release that’s no longer on Crumbl’s regular rotation, here’s a homemade version built to match the real flavor description.

Yields: 10–12 cookies Prep time: 25 minutes Bake time: 12–15 minutes

Chocolate Cookie Base

  • 113 g (½ cup) unsalted butter, softened
  • 100 g granulated sugar
  • 100 g brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 120 g (1 cup) all-purpose flour
  • 60 g (½ cup) unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp fine sea salt
  • 1 cup crushed chocolate sandwich cookies

Tie-Dye Buttercream Topping

  • 113 g (½ cup) unsalted butter, softened
  • 240 g (2 cups) powdered sugar, divided into three portions
  • 2 tbsp fresh lemon juice
  • 2 tbsp berry puree (raspberry or blueberry)
  • 2 tbsp marshmallow fluff

To Finish

  • 2 tbsp white chocolate, melted
  • Extra crushed chocolate sandwich cookies, for topping

Method

  1. Cream butter and sugars. Beat softened butter with both sugars until fluffy, then beat in egg and vanilla.
  2. Add cocoa and dry ingredients. Whisk flour, cocoa, baking soda, and salt separately, then fold into the wet mixture.
  3. Fold in crushed cookies.
  4. Bake. Scoop ¼-cup dough balls onto a lined sheet, bake at 350°F (175°C) for 12–15 minutes until edges are set. Cool completely before topping.
  5. Make the three buttercreams. Beat butter with half the powdered sugar until smooth, then divide into three bowls. Mix lemon juice into one, berry puree into another, and marshmallow fluff into the third, adding the remaining powdered sugar to each as needed for a spreadable consistency.
  6. Swirl. Pipe small dollops of all three buttercreams onto each cooled cookie, then drag a knife once through them to create a tie-dye swirl — don’t overmix, or the colors blend into one instead of staying distinct.
  7. Finish. Drizzle with melted white chocolate and sprinkle with extra crushed cookies. Chill at least 30 minutes before serving, since the original is served chilled.

FAQ

Is the Moonbeam Ice Cream Cookie still available at Crumbl? No — it was a limited-time release (June 23–28, 2025, with an encore week June 30–July 5) and isn’t part of Crumbl’s regular rotating menu.

Was Benson Boone actually involved in creating it? Yes — according to Crumbl’s own statements, he was directly involved in shaping the flavor, not just lending his name to it.

What song inspired the cookie? “Mystical Magical,” from Boone’s 2025 album American Heart — the flavor is built around a specific lyric from the song.

Could Crumbl bring this flavor back again? Crumbl doesn’t publish future menu plans, but the flavor’s popularity and its unprecedented encore week suggest it’s a strong candidate for a future return if fan demand stays high.
